Cooling Anti-Inflammatory Ginger Salmon and Cucumber Rice Bowl

Prep time: 15 minutes active | 25 minutes total | Makes 12 muffins
Ingredients:
- Cooking spray
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- 1 bunch green onions, chopped
- 8 large eggs
- 2 ¾ ounces fully-cooked bacon pieces
- ¼ cup whole milk
- 1 pinch garlic powder, or to taste
- 1 pinch onion powder, or to taste
- Salt and ground black pepper, to taste
- ½ of an 8-ounce package shredded mild Cheddar cheese
Instructions:
- Preheat your oven to 350°F. Spray a 12-cup muffin tin well with cooking spray.
- Divide the green pepper, red pepper, and green onions evenly among the muffin cups.
- In a large bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, and pepper until smooth.
- Stir in the bacon pieces and shredded Cheddar.
- Pour the egg mixture over the vegetables, filling each cup about three-quarters full.
- Bake for 20 to 25 minutes, until the centers are set and a knife comes out clean.
- Cool for a few minutes, then run a knife around each muffin to release. Store in the refrigerator for up to 4 days, or freeze and reheat.
One swap worth making: the peppers and onions here are not filler. The fiber in them slows digestion even further, which flattens your blood sugar response more than eggs alone. Add a handful of spinach if you have it.
