A Back-To-School Breakfast That Makes Mornings Easier

These breakfast egg muffins are inspired by your favorite morning casserole or omelet! Great for an on-the-go breakfast and very customizable to your tastes. You can substitute any vegetables or meat that you like. These are great to make ahead and freeze so you and your family have an easy delicious breakfast on busy mornings

Make Your Mornings Less Stressful

You eat breakfast. An hour later you are foggy, irritable, and reaching for coffee or something sweet just to keep going. If that sounds familiar, the issue is probably not your willpower. It is your blood sugar.

Most quick breakfasts are built on refined carbs: the pastry, the sugary cereal, the giant flour tortilla. These spike your blood sugar fast, then drop it just as fast. That crash is what leaves you exhausted, hungry again, and stuck in a cycle that repeats every single morning. Over months and years, those repeated spikes are also one of the drivers we look at when someone comes to us struggling with stubborn weight, energy loss, or a creeping march toward type 2 diabetes.

Here is what your body is actually asking for at breakfast: protein and fat first. When you lead with protein instead of sugar, your blood sugar rises slowly and stays steady. Steady blood sugar means steady energy, fewer cravings, and a morning where you feel like yourself.

That is the whole idea behind these breakfast egg muffins. Eight eggs, real vegetables, and bacon, portioned into a grab-and-go muffin you can make once and eat all week. No drive-thru. No crash. Just protein doing its job.

Cooling Anti-Inflammatory Ginger Salmon and Cucumber Rice Bowl

Prep time: 15 minutes active | 25 minutes total | Makes 12 muffins

Ingredients:

  • Cooking spray
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 1 bunch green onions, chopped
  • 8 large eggs
  • 2 ¾ ounces fully-cooked bacon pieces
  • ¼ cup whole milk
  • 1 pinch garlic powder, or to taste
  • 1 pinch onion powder, or to taste
  • Salt and ground black pepper, to taste
  • ½ of an 8-ounce package shredded mild Cheddar cheese

Instructions:

  1. Preheat your oven to 350°F. Spray a 12-cup muffin tin well with cooking spray.
  2. Divide the green pepper, red pepper, and green onions evenly among the muffin cups.
  3. In a large bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, and pepper until smooth.
  4. Stir in the bacon pieces and shredded Cheddar.
  5. Pour the egg mixture over the vegetables, filling each cup about three-quarters full.
  6. Bake for 20 to 25 minutes, until the centers are set and a knife comes out clean.
  7. Cool for a few minutes, then run a knife around each muffin to release. Store in the refrigerator for up to 4 days, or freeze and reheat.

One swap worth making: the peppers and onions here are not filler. The fiber in them slows digestion even further, which flattens your blood sugar response more than eggs alone. Add a handful of spinach if you have it.
